Gluten-free Japanese Fried Chicken, Karaage (Low-carb)

Concept

Brand-new low-carb Japanese Fried Chicken, Karaage. 

While eliminating wheat, this recipe enhances texture, umami, and satisfaction.

It reconstructs traditional Japanese karaage into a low-carb format that meets modern needs, including health, allergies, and religious dietary considerations.

Recipe

Ingredients

■ Main Ingredient

・Chicken thigh: 300g

■ Marinade

・Tamari soy sauce: 2 tsp

・Salt: 1/2 tsp

・Sake: 1 tsp

・Rehydrated shiitake soaking liquid: 1 tbsp

・Concentrated kombu dashi: 1 tbsp

・Ginger: 1 tsp

・Garlic: 1/2 tsp

・Sesame oil: a small amount

■ Coating

・Almond flour: 8 tbsp

・Cornstarch: 3 tbsp

■ Finishing

・Japanese sansho pepper: a pinch

・Lemon zest: a pinch

Instructions

  1. Rehydrate dried shiitake mushrooms in water for 60 minutes.

  2. Prepare kombu dashi: Soak about 10g of kombu in water for 60 minutes (around 60–70°C).

  3. Marinate the chicken in the marinade for at least 30 minutes (up to 2 hours).

  4. Remove excess moisture from the chicken and coat with the flour mixture, leaving a rough texture.

  5. First fry: Fry at 150–160°C for about 4 minutes.

  6. Rest for about 3 minutes.

  7. Second fry: Fry at 190°C for 45 seconds.

  8. Finish: Sprinkle with lemon zest and sansho pepper.

材料

■ 主材料

•      鶏もも肉:300g

■ 下味(マリネ液)

•      たまり醤油:小さじ2

•      塩:小さじ1/2

•      酒:小さじ1

•      干し椎茸戻し汁:大さじ1

•      濃縮コンブダシ:大さじ1

•      しょうが:小さじ1

•      にんにく:小さじ1/2

•      ごま油:少々

■ 衣

•      コーンスターチ:大さじ3

•      アーモンド粉:大さじ8

■ 仕上げ

•      山椒:少々

•      レモン皮:少々

作り方

1. 干し椎茸を水で60分戻す

2. コンブダシを準備:約10g(10cm角)を60分浸水(60〜70℃目安)

3. 鶏肉をマリネ液に漬ける(最低30分〜2時間)

4. 肉の水分を拭け、衣をつける(ゴツゴツ感を残す)

5. 一度目の揚げ:150〜160℃で約4分

6. 約3分休ませる

7. 二度揚げ:190℃で45秒

8. 仕上げ:レモン皮、山椒をふる
